AMERICAN style BREAKFAST the EGG
Eggs are the focus food in the American breakfast. Eggs cooked any way the diner desires.
Breakfast Eggs are cooked the following ways:
Over easy - the white of the egg is cooked until it is solid white just set soft, the yolk is intact and will be liquid and run when pierced. The egg is cooked to proper state and then flipped to cook the top of white and yolk. The egg is then flipped again so it can be served with top of the egg right side up.
Over medium - same cooking technique as described with over easy. The entire egg is cooked longer before flipping and longer after flipping. This yields an egg with a firmer white (than over easy) and the intact yolk is not as liquid and is firmer.
Over hard - the egg is cooked in the same manner as the over medium. The yolk is pierced just after the egg is placed in the egg pan. The egg is cooked on both sides until the yolk is cooked to a solid state and should be a pale yellow.
Scrambled - the egg is whisked, stirred until the yolk and the white are blended well. The liquid egg mix is cooked until firm in texture.
Milk or cream can be added to the mixed eggs to make a creamy texture scrambled egg.
Eggs Up, Sunny side up - the egg is cooked without flipping. The yolk is intact and will be liquid. The white will be firm but not overcooked.
Note: some culture preferences cook up eggs until there is a crispy egg to the white. To get a crispy edge cook egg in oil.
Poached - the egg is cooked in simmering water and vinegar solution. The egg can be poached to 3 different states.
- Soft - the white is cooked and the yolk is soft set and will run when pierced.
- Medium - the white is firm and the yolk will be thicker yet still run when pierced.
- Hard- the egg will be cooked until the yolk is solid with no run.
Basted - an egg cooked like a sunny side up egg. The egg is basted in butter to cook the top of the egg. Using a spoon to cover the egg in a layer of hot butter that cooks the egg.
Another way to baste without butter. A egg can be basted by adding water to a hot pan and covering the egg with a lid. This will steam the egg .

An omelet is made from a mixture of egg yolks and whites, seasonings and a liquid ingredient like milk, cream or water.

What to Expect Going Out for Breakfast in Reno
Dining out for Breakfast in Reno during the weekend can be an experience. Especially if you are from out of town. Saturday & Sunday from early AM to noon are the peak service hours for every breakfast establishment in Reno. During these times there are locals as well as tourists and out a town visitors. Which means a large number of people are going out for breakfast. The result is when there are high numbers of patrons all going to breakfast at the same time as everyone else, expect a wait for a table.
At least 15 to 20 minutes all the way up to 90 minutes.
- The later one goes expect a longer wait.
TABLE TURNOVER
The average Table Turnover Time (the time it takes for a party of diners to be seated and fed) is at least 30 minutes, all the way to an hour plus. When a breakfast restaurant is in full operation the time waiting at the table for the ordered foods may become longer. Which effects the table turnover time.

Reno's Casino Resorts is where a number of restaurants with breakfast menus can be found.
The restaurants in casinos are set -up and operated to handle high volume breakfast service. The dining rooms are purposely large (200 plus seating) and the kitchen is properly staffed. the front of the house staff handle the incoming patrons in a manner that does not overwhelm the kitchen. The restaurants as a result provide a solid breakfast service.
Which means that even though the place is operating at capacity, the front of the house and back of the house should operate effectively when busy. Food quality is maintained and front of the house service is operating properly.

There are a number of Small Chain & Local Independent breakfast service establishments in Reno offering large and bold flavor menus for breakfast.

- These establishments have smaller dining rooms 50 to 100 persons seating. Which means the dining room will be packed during peak breakfast service times.

There are important factors to keep in mind.
When placing your order through the delivery service app., make sure you properly enter your information regarding your order.
ie. Any modifications, special diet needs, preparation instructions, temperatures food items to be cooked. All pertinent requests must be made known through the app. When placing order.
Each app. handles input of that type of user information in their own way.
All expected food items must be ordered. If it is not ordered it will not be included in your delivery order.
eg.
Condiments are considered by the food service as a food item that has a cost. If a condiment is not stated as being included as part of a meal or ordered food item/dish, it will not be included. A direct request for items such as sauces, dressings, dips and other related condiments. The driver cannot request such items from the food service establishment. Regardless of whether the food service charges for condiments. The food delivery driver is only allowed to handle sealed containers and bags holding the delivery items. They are not allowed to add, take away or otherwise handle contents of sealed bags of orders.
If a customer receives a delivery bag and it is missing contents, the fault goes to the distributor of the food delivery parcel/package .
The driver is not allowed to open the bag.
The responsibility of confirming all the items are in the delivery goes to the food service staff.
Attention! If you are a patron of a food delivery service and you received a delivery missing items contact the food service establishment immediately or go through the delivery app. for a refund. They (the food service operator) can send the missing items through the delivery service. Sometimes the same driver will be able to deliver it.Going through app. when you have an issue is always recommended.

The Breakfast PHENOMENON
What actually happens during a high volume breakfast service. An interesting phenomenon occurs. Here how it happens.
- A high number of people go to a breakfast restaurant. The number of people showing up for breakfast fills the establishment in a very short time.
- A full house of diners all get seated all about the same time.
- Then the servers take all the orders for all the diners all at about the same time.
- Then all the orders for entire place are submitted to the kitchen all at once.
What happens then is that the kitchen becomes overwhelmed.
Which means that the ticket times can be much longer. 30 minutes plus waits for ordered dishes.
