American Dinner & Supper
To speak of Dinner leads to the term Supper.
In America Dinner is commonly used to refer to a meal enjoyed mid-day to early evening. Regardless of where the meal is taken. ie. Dinner is a meal eaten out at a celebration or event.
A meal taken at home or at an informal setting is Supper .
The term Supper is from the Old French word super which means evening meal.
- Supper is used especially when the meal is an informal one eaten at home, while dinner tends to be the term chosen when the meal is more formal.
- Supper describes a takeout out meal from restaurant to be eaten at home
- Supper can also be used to describe an informal meal out at a casual restaurant.
Dinner Food Services/ Supper Food Services
Dinner is the term to describe a formal meal for a celebration and or event. Which means the actual dining establishment must be suitable for the celebration/event.
They must have the following:
Full Table Service. A staff dedicated to providing proper amenities and serving the diners at their table.
A Host/Hostess receives the diners and seats them at their table.
An assistant to the server (referred to as a busser) will make sure the table is properly set and will take your drink/beverage orders. They will be the ones that keep your glasses full and your table is cleared as needed.
Server Waiter/Waitress
A Staff member job dedicated to handling and being responsible for all aspects of serving the diner their dinner meal. The Server will take the diner's order and submit it to the kitchen for production. The Server will tend to all the diners needs at their table.
The Dinner event consists of courses that are served timed to the diners dining flow at the table.
Beverages (both alcohol and non-alcohol beverages) orders are served first.
Then the orders for appetizers are taken, produced and served.
Next starters like soup, salad are ordered and served.
Followed by the main , referred to commonly in America as entree.
Dessert the sweet offerings are then ordered.
A beverage is offered like coffee or a alcohol or non alcohol drink is enjoyed at the end.
The Server provided hospitality service and manages all the diners interactions. All the way to final checking out and handling payments.
Supper Food Services
Supper level dining establishments provide what is called casual service. The setting and meal are informal. There is commonly table service but, is at a lesser level.
The Server is usually the only staff that will be providing for the diners.
In Diner style restaurants the customers seat themselves or are seeded by the server assigned to you. The Server will also provide beverages and the dishes to the table.
Supper can consist of a 3 course meal (starter, main and a dessert) like a formal dinner.

Here is How it Works
When a restaurant knows how many diners they should expect (for a run of dinner service) they can prepare accordingly.
The back of the house (the kitchen) can prepare the proper amount of foods for the dinner service.
The front of the house (server staff and managers) can staff their crew to be able to handle expected number of guests to take care of.
Dining Times and Peak Service Times
For culinary and hospitality professionals there is the dinner rush. It is the time period that the highest flow of incoming patrons is occurring. Which is commonly considered starting at 5pm/17:00 and goes to 8pm/20:00. The restaurant will fill to capacity and all staff is engaged at a high level.
The restaurant is able to handle the dinner rush because they know how many confirmed diners they will be dealing with. This is known through the reservation system.
Reservations Control The Flow.
If a restaurant takes toy many reservations for a specific time period it creates a negative condition. A condition that can worsen and possibly affect (negatively) food quality and efficiency of the table service. Resulting in longer waits to be seated, longer ticket times and lapses in proper service.
Overwhelming the kitchen.
A kitchen has a production rate.
Which means that a kitchen can handle a finite number of tables at a time. When the server staff submits too many orders the kitchen gets behind. Which translates to the guests waiting longer than proper times for their food order. Also the server staff becomes strained because they to can only handle the guests at a certain rate.
When you should make Reservations
At least make reservations the day before.
Current day America seems to make reservations hours before the expected dining time.
Most common practice is 2 days before (According to a recent survey conducted by Forbes magazine.)

Ticket Times
The "ticket time" is the time it takes for the kitchen to produce the dishes and fulfill a table's order.
At a casual dining restaurant dinner entree ticket times should be between 14 to 16 minutes. 20 minutes at the most.
Fine-dining appetizer ticket times 13 to 16 minutes.
Fine-dining entree ticket times 20 to 30 minutes depending on the type of food and dishes.
eg. Peking Duck at a Chinese restaurant takes an added amount of time to prepare. 20 to 30 minutes is common.
Thick cut steak like a Tomahawk ribeye (2 inches thick) requires 30 to 40 plus minutes to cook to medium rare (125°F. to 130°F. medium 135° F. to 140°F.)
Also large parties (6 or more) take longer to stage and plate.
What to Expect When a Restaurant Does Not Take Reservations
Restaurants that do not take reservations require patrons to go through the process of requesting and waiting for a table.
Fine-dining level restaurants that do not take reservations follow the process described below.
Upon entering the restaurant you will see a Host/Hostess stand with a staff member waiting to greet the patrons. The staff will record your contact information and number in your party. The Host/Hostess checks their dining room state and table availability. If there are no tables available at the moment they will deduct when the next table will be available.
Note: When one has been in a restaurant and noticed there are tables empty the thought comes to mind that there are actual empty tables. When informed that there are no available tables at the moment one thinks what are the empty tables that they see. Common mistake. Empty tables in a full restaurant means those tables are in a section (of the dining room) that is not operational or being staffed.
Wait to be Seated time
Dinner time casual dining restaurant - 15 to 25 minutes. During peak service times (dinner rush times 5 to 8 pm) 30 to 44 minutes.
Table turnover time for casual dining 60 to 90 minutes
Fine-dining and upscale casual dining restaurants
Time to wait for a table can be as little as 20 minutes and as long as 45 to 54 minutes.

Here is an overview of how counter service works.
The restaurant is set- up with a counter manned by staff.
The menu is usually prominently displayed above the counter highly visible.
The POS station (ordering terminal and cash register) is behind the counter and is staffed by personnel.
Note: some chain counter service restaurants have set-up kiosks with a POS (point of order system) for customers to use to submit and pay for their orders. Completely self serve.
When placing your order with a staff member they will take your form of payment and provide you a receipt with your order ID number.
Common procedure will be your number will be called out when your order is ready. You will then have to pickup your order at the counter.
Note: Some counter service operations give you a number to place on your table. It identifies you with your order. When your order is ready a staff member (called a runner or food runner) will deliver your order to your table. In this case they have provided limited table service. Such operations a small tip ($2 to $5) is proper for running your food and clearing your table after you finish.
If it is an establishment with a self serve beverage station you will be provided a cup by the staff that took your order.
If not the staff taking your order will provide you your beverage or it will be ready when the rest of your order is ready.
After completing your dining you can clear your table or you can leave it for the staff to clear. They have to clean and sanitize your table after you are done. If you do not clear your table a small tip is considered proper etiquette. $ 2 to $4 for a party of 2 to 4.

Make sure that all information regarding the deliver address is entered correctly.
Years experienced delivery drivers state it is a common occurrence to have an address with the correct street name but an incorrect number address. Example the number is supposed to be 6400 and the number entered was 4600.
Any special directions needed to locate the actual point of delivery must be provided.
