LET'S TALK ENTREE

entrée noun
en·trée | \ ˈän-ˌtrā
Definition of entree

Entree, modern term commonly used (in the USA ) to describe the main course of a meal.
This applies to all meal times breakfast, lunch, supper, (informal) and dinner.
Ala Carte in America is a main dish served without sides for a meal.
In Australia the first course or appetizer is called the entree.
Areas of Europe and the UK during formal dinners the entree is the dish that is served between the fish and meat course.
Entree the word (French origin) means
The beginning.

Entree is any dish of meat, fish, fowl or game, prepared and cooked for the second course of a formal full course meal.
For many it is the 3rd course dish that is made to be served with a sauce.

ENTREE MAIN COURSE

North American
The main course is the featured or primary dish in a meal consisting of several courses. It usually follows the entrée ("entry") course.  In the United States and parts of Canada, it may be called "entrée".
In North American English, the term retains an older meaning describing a heavy, meat course, due to the disappearance in the early 20th century of a large communal main course such as a roast as a standard part of the meal in the English-speaking world. This use of the term is almost unheard of outside North America, as most other English speakers follow contemporary French usage, generally considering the word "entrée" to mean a first course.

AMERICAN style COURSES

At restaurants or formal dinners, the entrée is the main course, or sometimes a dish before the main course.  Dinner features a hot entrée of chicken, veal, or lamb.
In the US, the entrée became the main course, and appetizers or starters became the first course. In France, the entrée stuck with its translation ("start," "beginning," "entry") and position of being the course before the roast, thus becoming the first course.

FEATURED ENTREE ITEM

Bacon & Spinach QUICHE

A dish originated from old world Europe exists currently in various versions.
Quiche is a dish that can be served as a side, main or appetizer for breakfast, brunch, lunch or dinner.
Quiche is like a savory custard pie.  There is a pastry crust which is filled with eggs, seasoned vegetables and meats.  Baked like a pie until golden brown.  Served in wedge slices which reveal the bounty of the filling.
Quiche originated in the German kingdom of Lothringen, where it was called Lothringer speckkuchen. This region was under Germanic rule from the 4th to the 17th century. At that time, France gained control of the region, and the town's name was changed to Lorraine. The tart was now called quiche Lorraine. The region went back and forth between the two countries several times until after World War II, when what is now called Alsace-Lorraine became French once more.
Hearty and savory quiches originated in medieval Germany
There are records from ancient Rome with reference to egg pie like dishes.  Modern versions of Quiche recipes have been traced back to Medieval Germany.
Quiche Lorraine is the original version recipe.
Named Lorraine after the French held region of Germany where the dish originated.
Quiche Lorraine recipe contained an egg and cream custard and smoked bacon. Overtime, cheese was added to the recipe. If onions are added to the recipe it's called Quiche Alsacienne.
The crust for the quiche was a bread dough.  Puff pastry and pie crust replaced the bread dough.  Modern quiche recipes (like this recipe) use polenta for the crust.  Which makes the version of quiche gluten free.
Traditional quiche is served with some form of fried potatoes and a green salad.  France this is common.
In the U.S. Quiche may be served in many ways, alone or with many different accompaniments.
In the late 1970s and early 1980s it seemed like quiche madness descended upon this country. Quiche was served practically everywhere.  By the late 1980s quiche lost its popularity, probably due to overexposure. However, this tasty dish is now making a comeback.
